February is the American Heart Month. But it's also a time when we want to eat a hearty, wintertime meal.
Woodfire Grill's Chef Toby Christianson joined Genesis Medical Center Heart Institute's Ken Croken to make a White Bean Chili in the Genesis Healthy Heart kitchen during News 8's "Good Morning Quad Cities".

White Bean Chili
Ingredients:
- 1 lb of raw chicken
- 1 diced onions
- 2 stocks of celery diced
- 4 oz. of chipotle peppers
- 3 oz. Extra Virgin Olive Oil
- 1/4 cup of flour
- 2 16 oz. cans white beans
- 1/2 cup cilantro
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 qt chicken stock
- 2 oz. lime juice
Directions:
- Caramelize onions and celery in olive oil
- Add 1 cup of chicken stock
- Add flour to make roux
- Add chopped chipotle peppers
- Sear chicken breasts
- Add seared chicken stock mix
- Add salt and pepper to taste
- Simmer for 1 hr
- Pull chicken and separate
- Add cilantro, cumin, chili powder, and lime juice
- Mix in rinsed white beans and season to taste
