Chef Toby: Make a Chili That’s Hearty and Heart Healthy

February is the American Heart Month.  But it's also a time when we want to eat a hearty, wintertime meal.

Woodfire Grill's Chef Toby Christianson joined Genesis Medical Center Heart Institute's Ken Croken to make a White Bean Chili in the Genesis Healthy Heart kitchen during News 8's "Good Morning Quad Cities".

White Bean Chili

Ingredients:

  • 1 lb of raw chicken
  • 1 diced onions
  • 2 stocks of celery diced
  • 4 oz. of chipotle peppers
  • 3 oz. Extra Virgin Olive Oil
  • 1/4 cup of flour
  • 2 16 oz. cans white beans
  • 1/2 cup cilantro
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 qt chicken stock
  • 2 oz. lime juice

 

Directions:

  • Caramelize onions and celery in olive oil
  • Add 1 cup of chicken stock
  • Add flour to make roux
  • Add chopped chipotle peppers
  • Sear chicken breasts
  • Add seared chicken stock mix
  • Add salt and pepper to taste
  • Simmer for 1 hr
  • Pull chicken and separate
  • Add cilantro, cumin, chili powder, and lime juice
  • Mix in rinsed white beans and season to taste
